Nothing beats a good bowl of soup to warm up during these cold days. It’s also low in calories. Today we have a recipe for pumpkin soup with ginger that promises to lift your spirits.
• ½ kg pumpkin
• 1 litre of chicken or vegetable broth
• Garlic and onion
• Salt and pepper
• Grated ginger
Clean out the pumpkin, remove the peel and cut it into cubes. Cook it in salted water until the pumpkin is tender. Drain and set aside.
In a saucepan, sauté the garlic and onion. Add the pumpkin and sauté for two to three minutes.
Add the chicken or vegetable broth and cook for five minutes.
Add salt, pepper and ginger.
When the stew is ready, place in blender and mix.
Try it and adjust the seasoning accordingly.
Serve warm, decorating your soup with parsley and olive oil. Serve with two slices of toast.
